CARDO — Wild Thistle Honey / Miele di Cardo
This honey, with floral and fruity notes and a pleasantly bitter finish, comes from wild thistle flowers in the Sardinian interior. It has an amber color with a characteristic greenish reflection; after crystallization, it acquires a beige hue. It pairs wonderfully with sweet and sour sauces or fresh ricotta.
Origin and Craftsmanship
Thistle blooms in hot and dry weather at the end of summer, far from the coast and cultivated agricultural fields. Its nectar produces honey that is light, dense, and slow to crystallize – characterized by a clean, slightly bitter taste unique to this island.
The honey is harvested in small quantities by Arbarée and imported into the Czech Republic with full traceability of origin. It is 100% natural, unpasteurized, and untreated by heat – with no added sweeteners or processing that would disrupt its natural structure. It is produced using traditional island methods – without unnecessary additives and without rushed procedures.
